Happy Sunday and welcome back to another week of recipes. This week I got a bit creative and tried out a couple ideas I had and then shared another classic recipe I grew up with. The goal like always is to share simple foods that are easy to put together and I really feel this weeks recipes hit the mark perfectly. They all take little effort and are delicious. So without wasting any more time lets get into it.



Raddichio is a beautiful vegetable that is kind of like a cross between lettuce and cabbage. It comes in several different shapes and sizes and in this recipe I’m using the one that looks closest to cabbage. It has this beautiful purple color and has a slightly bitter taste so when you dress it nicely it’s so tasty. Next time you’re thinking of making something with lettuce or cabbage, try radicchio if you have some available near you. I really love shredded salads because each bite really gets you a bit of everything. I’ve already made this salad 3 times so I highly recommend this one!
The Oven Baked Chicken Kufta is a simple and easy way to get the ground chicken skewered look but done in an oven. Yeah it’s not the same as grilling but it gets you pretty close and with a lot less effort. Then pair it with some yellow rice, parsley, red onion, and some white sauce, you basically have yourself a halal cart style chicken plate. I think visually this one is amazing and then the flavors just elevate it even more.
Sabanikh is a recipe I grew up with that I quite honestly didn’t enjoy all that much as a kid. Sabanikh is the Arabic word for spinach and this is essentially a spinach stew with lots of garlic and lemon juice in every bite. As I’ve gotten older I realize why my Mom made this so often, it’s really just that good. It’s also a super quick and simple meal, it only takes about 30 minutes if you’re flying and 45-60 min if you like to take your time. It’s packed with protein and straightforward to do.
Shredded Radicchio Salad
Shredded salads are my new obsession and making it with radicchio just gives it a new level of beauty. I love myself a good salad. One that I can make in a big batch and eat throughout the week. This checks all the boxes. It’s filled with lots of fresh herbs and seasoned in the most simple way. You’ll be amazed how tasty this is!
Oven-Baked Chicken Kufta Skewers
This is my way of bringing the amazing NYC style street cart chicken into my home. There’s just something so appetizing about the street cart chicken. It’s the presentation, the colors, the smell, and of course the flavors. This is my super simple method to recreate it right at home and it only takes an hour to do. My wife actually said this is the only way she wants chicken from now on!
Sabanikh (Spinach Stew)
This is my favorite way to have spinach, forget raw in a salad, stewed like this is the way to go. Sabanikh is the Arabic word for spinach and my family, if we’re asked or told we’re having sabanikh, this is what’s on the menu. It’s a very simple mix of spinach, garlic, onions, and ground beef with plenty of lemon juice. It’s a one of a kind dish that’s both healthy and simple to do.
