Levantine Potato Salad, Mediterranean Poached Cod, & Roasted Eggplant and Lentil Salad
Welcome to my new format to share recipes without overloading your inbox. I think a weekly letter every Sunday morning is a great way to recap the week and to give those of you interested in making any of the recipes enough time to grab the ingredients needed before our busy work week starts.
This week was focused on very light but flavorful dishes. A Levantine style Potato Salad, a Mediterranean style Poached Cod, and a very simple Roasted Eggplant and Lentil Salad.



The Potato Salad is something very dear to me. It’s a dish we had on numerous occasions whether it was family dinner, a small get together, or even a big party. It’s something everyone can enjoy and it’s really a very easy dish to put together. We use what I like to call my Holy Trinity (garlic, lemon, & olive oil) with a few herbs to dress so boiled potato. It really is very simple and very delicious.
The Poached Cod is a dish I’ve been craving lately. It takes me back to days I spent on the Amalfi coast or south of France. Just a very light, fresh, and fragrant dish with great quality ingredients.
The Roasted Eggplant and Lentil Salad came about because I have been visiting my parents a lot lately and my mom always had some sort of eggplant dish in the fridge. Most recently was her Moussaka and the eggplants were just perfect. She told me how she prepped them so I recreated it and put them in a salad instead. I left them in a bit longer by accident but the written instructions are what it should be.
Levantine Potato Salad
This is a very popular dish amongst Palestinians, Lebanese, Syrians, and Jordanians. Whether or not you want to call this a salad is up to you but to us, it’s a potato salad. It’s extremely easy to do and uses what I like to call my holy trinity (garlic, lemon, and olive oil). I can’t stress enough how delicious this is and I hope you can give it a try.
Poached Cod
This is I dish I believe captures all the main flavors of the Mediterranean. It’s fresh, bright, colorful, light, and so so flavorful. You have your tomato, garlic, onion, olive oil, lemon, basil, you have it all! It’s a very simple and straightforward dish to make so I hope you can give it a go.
Roasted Eggplant and Lentil Salad
This is one of the better salads I’ve ever made. There’s just something so satisfying about a good roasted eggplant and mix that with a tangy lemon dressing… it’s a home run. Also I feel like lentils are a very under used item in the US so this is one great way to use them. I hope you give this one a try and I promise you’ll enjoy!
