Cauliflower Steak
This is the kind of dish I would present to anyone who says they don’t like veggies or to eat vegetarian, I guarantee it’ll change their mind. What makes this work so well is understanding how textures and flavors play together. This is a well charred cauliflower with lots of crispy bits served over a creamy mutabal (eggplant dip). Add a bit of heat, some fresh herbs, and olive oil, you have yourself a beautifully simple and elegant dish.

Time: 80 minutes (60 min for eggplant, 20 minute for cauliflower)
