Chocolate Covered Walnut Stuffed Dates
These three are arguably the best trio you can put together for a simple homemade dessert. I love to snack on dates and walnuts, it’s really how I love to start or end my days. But combing the two and then covering in chocolate just makes it that much better. There’s no fancy tricks here or anything remotely difficult. Just a little extra effort and you have yourself an incredibly delicious dessert.

Ingredients
1-2 cups Walnuts
10-12 Medjool Dates
16 oz Dark Chocolate
Malden Salt to taste
Instructions
Place the walnuts in a food processor and blitz until you have a chunky mix. If you blitz too much you’re left with very small pieces so you lose the crunch of the walnuts. Once they’re to the size you like the walnuts aside. You’re welcome to add sugar to this mix but for me, the dates are already sweet enough so no need for extra sugar.


Pit the dates by slicing them down the middle lengthwise. Gently peel them open and remove the seeds without completely ripping the date apart.
Fill each date with the walnut crumble, pinch them closed as best you can, and place in the fridge to set for at least 10 minutes.




Either microwave or use a double boiler to melt the chocolate. Once it’s a smooth consistency, roll each date in the chocolate then place on parchment paper. Once all the dates have been covered in chocolate, allow them to cool for 10 minutes on the counter top. Then sprinkle a bit of salt on top. Malden salt is best so you can see the salt but any salt will do.




Place them in the fridge to cool for at least 30 minutes and enjoy!
