Chocolate Lava Cake
I don’t think this needs any introduction. Chocolate lava cake is probably the most popular dessert in the world. First of all it’s gorgeous, the presentation when it arrives to your table is always spectacular. Second, it’s rich beyond belief. I always half regret eating it because I eat too much of it. And last, it’s what I would consider, the ultimate form of love. Believe it or not, it’s quite simple to make. Just be gentle and patient while you make it and it will turn out perfect.

Time: 1 hour
Ingredients
10 tbsp Unsalted Butter
0.5 cup Granulated Sugar
8 oz Semisweet chocolate (chopped)
4 Eggs
4 Egg Yolks
1 tsp Vanilla Extract
0.5 cup AP Flour
0.5 tsp Salt
Fresh Berries (Garnish)
Powdered Sugar (Garnish)
Vanilla Ice Cream (Optional)
Instructions
Microwave the butter and chocolate in short increments (30 sec) until melted and smooth. Or melt in a double boiler until smooth then let it cool.



Whisk the eggs, egg yolks, vanilla extract, and granulated sugar until slightly thick and pale in color.


Gently fold the melted chocolate into the egg mixture then gently fold the flour and salt.



Once well combined, divide the batter among 3 buttered ramekins. Optionally, you can sprinkle some extra sugar in the ramekin then tap out the excess before adding the batter. At this point you can cover and save the batter in the fridge to bake later or bake right away.
If baking right away, place in a 425F degree oven for 10-12 minutes. If baking from the fridge, place in the oven for 13-14 minutes. When done, remove from the oven and gently run a knife around the edges to loosen. Let the cake cool for 2 minutes.





Flip the ramekin onto a plate and let it sit for another minute then gently lift to reveal the cake.


Serve with powdered sugar, ice cream, and berries.
