Eggplant Bruschetta
So this is what happens when you take an Italian dish and add a little Middle Eastern flavor to it. It’s a simple roasted eggplant topped with a tomato and herb mix. It’s the same but different. These are the kinds of appetizers or small bites I like to snack on at home. They don’t take much time to prepare and you can eat a zillion without much repercussion.
