Fresh Berries & Cream with a Caramel Crunch
I have a major sweet tooth and this is one of my favorite desserts to make. You get fresh berries and fresh cream. The amount of sugar is all up to you. And the crunch of the caramel is my cherry on top. Quick and easy and I guess healthier than most other options.

Time: 30 minutes
Ingredients
0.5 cup Blueberries
0.5 cup Strawberries
2 cups Heavy Cream
0.25 cup Fresh Mint
1 cup Sugar
Instructions
Pick out the best berries until you have a half cup of each and then thoroughly wash and dry the berries. At this point the strawberries can be cut, I like to cut into quarters. Place them all in a large mixing bowl.
Next take the fresh mint leaves and cut into thin strips by rolling them together and cutting along the roll. Add them to the mixing bowl with the berries.
Add a 0.25 cup of sugar and mix together well and place in the fridge to chill.
Place small pot on medium heat for a couple minutes. Add in 0.75 cup of sugar and don’t touch it. Let it melt and you can occasionally move the pot to keep the sugar covering the bottom of the pot.
Once it has turned to a nice orange caramel color, quickly pour onto some parchment paper and let it cool completely until it has hardened.
Use a tenderizer or rolling pin to break the caramel into tiny pieces then keep to the side
Lastly, pour the heavy cream into a large mixing bowl and use a hand mixer to whip the cream to stiff peaks.
To assemble the dessert, place the berries in a bowl, add the whipped cream on top, and finally garnish with the caramel bits and enjoy
