Garden Salad
I’m here to prove that salads are the key to taking any meal from good to great. I always hear people say they hate salads, or don’t care for salads, or salads are the food their food eats, whatever… I think that’s because the salads most western cultures are aware of are bland, boring, and drowned in some dressing that just kills the vibe. This is a salad that is bursting with flavors and doesn’t need some seed oil heavy dressing to make it taste good. Just quality ingredients, a bit of salt, and a dressing that brightens the natural flavor of each ingredient.
Serves: 4
Time: 20 minutes
Ingredients
1 small White Onion
1 Green Bell Pepper
3 Green Onions
3 Roma Tomatoes
1/2 cup Parsley (minced)
1/2 cup Mint (minced)
1 Lemon
2 tbsp Pomegranate Molasses
1 cup Pomegranate Seeds
Salt & Pepper to taste
Olive Oil (as needed)
Instructions
Finely dice the onion, bell pepper, green onion, roma tomato, parsley, and mint.






Cut open a pomegranate and remove the seeds until you have about a cup full. This was about a 1/4 or 1/3 of the fruit.



Place all into a large mixing bowl & season with salt to taste. Mix well and set aside.
In a small bowl, add the pomegranate molasses, lemon juice, and olive oil. Whisk well and pour all over the salad. Mix the salad together and you’re done. Let it sit in the fridge for 30 minutes to allow the flavors to set then enjoy!
