Ginger Ribbon Salad
The perfect pairing to any dish this summer, it’s light, bright, crunchy, juicy, and delicious. It’s the perfect salad for a hot summer day when you want to grab a bite but don’t want something heavy to weigh you down. Have it by itself or with some bbq, either way it’s incredible.

Time: 20 minutes
Ingredients
2 Large Carrot
3 Persian Cucumbers
2 Radishes
0.25 Red Onion
0.25 cup Fresh Parsley (minced)
0.25 cup Green Onion (minced)
2 tbsp Salad Blend (Zawi)
1 tsp Salt
3 tbsp Olive Oil
1-2 Lemon
1 inch piece of Ginger
Instructions
Peel the carrots and cut the tops and bottoms off. Use a mandolin to thinly slice 1/8” pieces of the carrot.



Repeat with the cucumber, radish, and red onion. Add all to a large mixing bowl.



Finely chop the parsley and green onion and add to the bowl.


Peel and roughly chop the ginger. Then either grind into a pulp or place in a food processor and blitz until you have a pulp. Then squeeze the juice of 1-2 lemons, depending on how much lemon you prefer.



Season the salad with salt, zawi salad blend, the lemon ginger dressing, and olive oil. Then mix well and enjoy.
