Greek Gyro Plate
I LOVE Greek Gyro but I don’t have a rotisserie to do it super properly and getting the grill going is a whole ordeal in itself - so here I have a very simple stove top Gyro that I have already made twice since writing this recipe! It’s really very easy to do and my wife and I have been absolutely obsessed. This one is definitely worth a try!

Ingredients
Gyro:
1 lbs Ground Lamb
1 lbs Ground Beef
1 Yellow Onion
2 Garlic Cloves
1 tbsp Oregano
1 tsp Salt
1 tsp Black Pepper
1 Red Onion
2 Roma Tomato
Greek Pita
Tzatziki:
3 cups Plain Yogurt
2 Persian Cucumber
1 tbsp Dried Mint
1 tbsp Oregano
1 tbsp Red Wine Vinegar
1 tsp Salt
Instructions
First step is to get the yellow onion and garlic shredded and the water squeezed out. So after removing the outer layers of the onion, either use a cheese grater or food processor to get the onion as shredded up as possible. You can throw the garlic in the food processor as well or grind by hand as I did.
Then place the shredded onion in a fine mesh strainer, nut milk bag, or even a dish towel, and squeeze as much of the water as you can out of it.



In a large mixing bowl add the ground beef, ground lamb, shredded onion, garlic, salt, black pepper, and oregano. Mix everything together for a few minutes or until fully incorporated.



To get thin pieces I’m placing the gyro mixture in a half sheet and pressing into a thin layer that covers the tray. Then using a knife or spatula, cut “skewers” out of it. Place in the fridge for 30 minutes to set. I was able to fill 4-5 half sheets in total.


To make the tzatziki, wash and shred the cucumber and place in a mixing bowl along with the plain yogurt, dried mint, oregano, salt, and red wine vinegar. Mix well and place in the fridge until you’re ready to eat. Slice the red onion and tomato as well.



Remove the gyro meat, heat up a skillet and add a touch of olive oil. Sear the meat on both sides until nice and crispy. This is the best way I can think of to replicate the shaved look of traditional gyro.




Finally toast the pita in a clean pan with a touch of olive oil until crispy on both sides.
Plate the meat, tzatziki, sliced red onion and tomato, and greek pita together and enjoy.
