Kufta B'Siniyeh
This dish has to be the most nostalgic dish for me - Kufta B’Siniyeh, the Levantine meatloaf. It’s very simple, you have kufta layered on the bottom of your baking dish with some onion, tomato, and potato on top. Dressed with lots of olive oil and baked to perfection. It’s really an easy dish to put together, nothing special or glamorous, just really good home cooking.

Ingredients
2 lbs Ground Beef
2 Yellow Onion
1 cup Fresh Parsley (minced)
2 tbsp Zawi Arabic 7 Spice
1 tsp Salt
2-3 Roma Tomato
2-3 White Potato
2 tbsp Olive Oil
1 tsp Black Pepper
Instructions
Take the first yellow onion, remove the skin, and grate using a large cheese grater or use a food processor. Strain as much of the water out of the onion and set aside. Next finely mince some fresh parsley with a knife or food processor and set aside.


In a large mixing bowl add the ground beef, grated & strained onion, and minced parsley. Season with salt and Arabic 7 Spice. Mix well until everything is fully incorporated.



Take the second onion, remove all the skin, and cut thin circles. Peel the potato and cut thin circles, and finally cut the same circles out of your tomato.



Press the kufta into your baking dish until you have covered the entire dish. Layer the sliced onion, tomato, and potato on top. Top with olive oil and some extra salt and black pepper to taste. Place in a 425F oven for 30 min the broil for 5-10 min. The plate and enjoy.
