Lemon Garlic Chicken & Potatoes

This is a dish I think we all grew up with in some form. Chicken and potatoes is a classic homemade dish mostly because chicken drumsticks and potatoes are relatively cheap when it comes to produce. And my favorite way to prep this is with a whole lot of garlic and lemon. It’s really hard to go wrong here so if you’re feeling up to it give this a try!

Ingredients

• 6-8 Chicken Drumsticks

• 3-4 White Potatoes

• 1 Large Yellow Onion

• 4 Lemons

• 0.5 cup Olive Oil

• 8-10 Garlic Cloves

• 2 tsp Salt

• 2 tsp Garlic Powder

• 1 tsp Black Pepper

• 1 tbsp Oregano

• 1 tsp Paprika

Instructions

Chop the potatoes and onions into cubes and add to a large mixing bowl. Crush the garlic with some salt into a paste and add to the bowl with the lemon juice, 0.25 cup olive oil, and a tsp of salt. Mix well and lay into a large baking dish.

Place the chicken drumsticks in the same mixing bowl and add another tsp of salt and the garlic powder, paprika, black pepper, oregano, and the other 0.25 cup of olive oil and mix well.

Place on top of the potatoes and onions. Spread everything out evenly and bake at 400F for 75 minutes. Plate and garnish with fresh parsley and aleppo pepper and enjoy.
