Lemon Mint Posset
This is the most refreshing and decadent dessert to cool off with this summer and you only need 4 ingredients. Think of this as a cross between ice cream and yogurt. It’s smooth and creamy like ice cream but has a little tanginess like yogurt. The lemon mint combo is the most popular combo across the Middle East and for good reason. And if you want to go the extra mile, serving them in the lemon peel is a sure fire way to wow your guests with this beautiful presentation.
Serves: 4
Time: 30 min + 3 hours (chilling)
Ingredients
4 Lemons
1 tbsp Lemon Zest
2 cups Heavy Cream
0.5 cup Granulated Sugar
0.5 cup Fresh Mint (minced)
Instructions
Cut the lemons in half from tip to tip. Scoop out all the lemon fruit and save the peels. If you don’t intend on using the peels, juice all lemons into a bowl or cup and set aside.



Place the heavy cream, sugar, and lemon zest in a sauce pan and bring to a light simmer. Let it ride for 5 minutes. Remove from the heat, add the lemon juice, and mix well. Allow it to cool to room temperature.


While it’s cooling, finely chop the mint and once the mixture is at room temp, add the mint and mix well.



Pour the mixture into the lemon peels or into a mason jar. Place in the fridge for 3-4 hours to set, then enjoy.
