Lemon Parmesan Kale Salad
This may just be your new favorite salad - it takes 20 minutes (even with home-made croutons) and is packed with so much flavor. It’s one of those salads where simple quality ingredients can really shine. With a simple lemon dressing, the natural flavors of each ingredient can pop creating the most perfect bite every time. It’s akin to a Caesar salad but a lot simpler to do.

Time: 20 minutes
Ingredients
Salad:
1 bunch Curly Kale
0.5 cup Green Onion
0.5 cup Fresh Mint
2 Lemons
0.25 cup Olive Oil
1 cup Parmesano Reggiano (grated)
1-2 tsp Salt
1 tsp Black Pepper
Croutons:
1 Sourdough Loaf
0.25 cup Olive Oil
Pinch of Salt
1 tbsp Oregano
1 tbsp Za’atar (optional)
Instructions
Take your sourdough loaf and break into small pieces. Try your best to keep the sizes relatively even so they can all bake evenly. Place all the pieces into a mixing bowl along with the salt, oregano, and olive oil. The za’atar goes in as well if you are using it. Mix until all are evenly coated. Lay onto a baking dish with plenty of space between each.



Heat the oven to 350F and place the bread in the oven for about 15-20 minutes or until done to your liking. Then remove and set aside to cool.


Wash the kale, green onion, and mint until thoroughly cleaned then dry completely. Remove the kale stems and thinly cut the leaves. Add salt to the bowl and massage into the kale to help soften them.


Finely chop the green onion and mint and place in the bowl. Add black pepper, parmesan, and the juice of two lemons. Add the croutons, the olive oil, mix well, and enjoy.
