Lentil & Chard Soup
This is a soup I can’t believe I passed on so many times growing up. I guess as a kid it’s not the most exciting but now…now it’s a whole different story. It’s so hearty and delicious I honestly crave it. I always feel so healthy and good about myself after eating some. It’s a soup I’ve now made three times in the last month. I hope you can enjoy it as much as I do.
Serves: 6
Time: 2 hours
Ingredients
1.5 cup Brown Lentil
1 lbs Swiss Chard
1 yellow Onion
1/4 cup Olive Oil
1 tbsp Flour
2 lemon
Salt to taste
1/2 tbsp Black Pepper
1 tbsp Cumin
8 cups water
Instructions
Start by getting the water into a large heavy bottom pot. Generously salt and set it to boil. Wash the lentils and drop into the boiling water. Cover and let it simmer on low heat for 30 minutes.



Dice the yellow onion and roughc chop the swiss chard. Add to the pot, mix in, cover, and let it simmer on low heat for 50 minutes.




In a medium mixing bowl, add the flour, olive oil, juice of both lemons, salt, black pepper, and cumin. Whisk until it starts to look like a caesar dressing. Drop it right into the soup, mix well and cook for a final few minutes.




Serve with extra lemon, parsley, and aleppo pepper and enjoy.
