This is THE winter dessert. It’s warm, comforting, cozy, and so satisfying. It’s a very simple mix of milk and rose water, thickened slightly and garnished with crushed pistachios and rose petals. It’s thickened with cornstarch and mastic (a resin that comes from the mastic tree across the mediterranean) which actually gives a very subtle depth of flavor. It doesn’t take much time to make but requires your constant attention.

Ingredients
4 cups Whole Milk
3 tsp Rose Water
0.5 cup Granulated Sugar
2 tbsp Cornstarch
2-3 Pieces Crushed Mastic
Pistachios
Rose Petals
Instructions
Start by getting 2-3 pieces of mastic and adding to a mortar. Grind until it becomes a fine powder and set aside.


Pour the milk, rose water, sugar, cornstarch, and mastic to a pot and mix until well combined. Do this before placing the pot on any heat so that the cornstarch can break apart and dissolve into the milk. If you do it on the heat you run the risk of having the cornstarch clump. Turn on a medium flame and whisk continuously until it thickens slightly. You’ll know you’re done when the milk begins to rise to the top of the pot.




Pour into a mug and top with crushed pistachios and rose petals and enjoy!
