Sfouf (Turmeric Cake)
Sfouf is your coffee and tea’s long lost friend. It’s a sweet treat that is typically eaten in the morning and has a similar texture to coffee cake but not quite as dry. It’s one of the easier cakes to make. It can all be done by hand in a large bowl with a whisk and silicone spatula. There are little pops of orange blossom that give this a nice floral taste as well. Time: 1 hour
Ingredients
1 cup fine semolina
1 cup flour
1 teaspoon baking powder
Pinch of salt
0.75 cups granulated sugar
0.75 teaspoon turmeric powder
0.75 cups milk
0.25 cup water
0.5 cup vegetable oil
0.25 teaspoon orange blossom water
Peeled Almonds or pine nuts for topping
2-3 tablespoon of Tahini
Instructions
Combine the semolina, salt, sugar, flour, turmeric, and baking powder in a large bowl and mix well.


Add the milk, orange blossom water and water. Gently fold everything together until well combined. Add the oil and keep folding until well combined and absorbed into the cake.




Brush a 9x9 baking dish with tahini. Pour in the batter and add the peeled almonds where you imagine the middle of each piece would be. Then into a 350F oven for 25 minutes. Remove and let it cool completely.




Slice the cake, then serve and top with powdered sugar and enjoy.
