Spicy Bulgur Salad
This is a salad I can almost guarantee you’ve never had, and it’s one I bet you’ll be making over and over again - this is a Levantine style Spicy Bulgur Salad. I say this a lot but I am a huge fan of salads. To me it’s a sign of how well you actually know and care for food. If you can throw together an amazing salad, I know everything else you make will be incredible. This is the kind of salad that will turn heads and keep everyone reaching for more!

Time: 30 minutes
Ingredients
2 cups Bulgur
1 tsp Aleppo Pepper
2 tbsp Tomato Paste
1 Yellow Onion
1 Lemon
1 cup Hot Water
Salt to Taste
1/2 tsp Black Pepper
2 tbsp Pomegranate Molasses
1/4 cup Olive Oil
3-4 Green Onions
3 Roma Tomato
1 Jalapeno
1/2 cup Fresh Parsley (minced)
1/2 cup Pomegranate Seeds
Romaine Lettuce (For serving)
Instructions
Add the bulgur, Aleppo Pepper, tomato paste, and diced yellow onion to a large mixing bowl. Season with salt and pepper, mix for a couple minutes so everything is mixed thoroughly. Pour the hot water on top and let it sit for about 10 minutes. All the water will be absorbed by the bulgur.




Next dice up a jalapeno, a few roma tomatoes, lots of parsley, and green onion. Add them to the bowl with a generous amount of pomegranate seeds.
Add lemon juice, pomegranate molasses, and olive oil to the bowl and mix well.



Finally let it sit in the fridge for 20-30 min so the flavors melt together nicely. Serve with romaine lettuce and enjoy.
