Stuffed Tomato
Of all the vegetables to stuff, tomatoes have to be the easiest and my favorite (yes I know tomatoes are fruits but we eat them like veggies so…). I think these are the least labor intensive to stuff because they’re easy to core and they’re already in a bowl like shape so it’s basically asking to be stuffed! Serve this with some rice and you have yourself and incredible meal.
