Watermelon Mint Salad
Watermelon is my absolute favorite summer fruit to snack on and mixing them into this salad just creates a whole new way to enjoy them. It’s a fresh, bright, light, and slightly tangy salad that I find myself making almost every other week. It’s a beautifully simple dish to switch things up this summer.
Serves: 4
Time 30 minutes
Ingredients
1 small Watermelon
1.5 cup Feta Crumbles
0.5 cup Fresh Mint
Quarter of a Red Onion
2 Persian Cucumbers
1 Lemon
1 tbsp Red Wine Vinegar
0.3 cup Olive Oil
1 tsp Salt
1 tbsp Zawi Salad Blend (optional)
Instructions
Start by cubing the watermelon into 1 inch or smaller pieces and placing them in a large bowl. Thinly slice the red onion and mint then chop the cucumber and all go into the bowl with the watermelon.




Add the feta, salt, zawi salad blend, lemon juice, red wine vinegar, and olive oil. Mix well and that’s it for the salad.




To make the croutons, slice pita into small pieces and place in a bowl. Add olive oil and Za’atar and toss well. Place onto a baking sheet making sure there is room between each piece. If it’s overcrowded, the pieces won’t toast evenly. Place in a 350F degree oven for 15 minutes then remove and let it cool.



Plate everything together and enjoy.
