Za'atar Biscuits
This is a recipe straight out of my Mom’s composition book. It’s a family treat we like to keep in the house from time to time that goes along perfectly with a cup of tea or coffee. They’re soft, crumbly, aromatic…not your typical kind of biscuit at all. This recipe makes A LOT of biscuits so feel free to cut the amount in half if needed. I myself did half the amount and still had about 23-25 biscuits!
Serves: 12
Time: 1.5 hours
Ingredients:
6 cups AP Flour
1 cup Olive Oil
0.5 cup Neutral Oil
1 cup Yogurt mixed with 1 tsp Baking Soda
Pinch of Salt
2 tbsp Baking Powder
0.5 cup Roasted Sesame Seeds
Levantine Za’atar (or fresh thyme/oregano)
Instructions:
Mix the dry ingredients, or more specifically, the flour, baking powder, sesame seeds, za’atar, and a pinch of salt together in a large bowl.
Add the olive oil and neutral oil and using your hands, mix well until crumbly and all dry ingredients have been incorporated with the oil.



In a separate bowl mix the yogurt and baking soda then immediately add to the dough. Combine it all together well and and knead until smooth.


Roll the dough flat, until it is about 0.25-0.5 inch thick and cut 1-2 inch circles depending on how large you would like the biscuits to be. Reshape and flatten the unused dough and continue cutting circles until you have used up all the dough.




Place the biscuits on a baking tray lined with parchment paper. Brush a bit of olive oil on top, and into a 375F degree oven for 12 minutes.




Then remove and enjoy with a cup of tea or coffee.
