Knafeh Cups
Knafeh is a world renowned dessert consisting of buttery dough & sweet cheese (kind of like mozzarella) oven baked or slow cooked over a stove until the dough becomes crispy and the cheese is gooey and melty giving you the best cheese pull you’ll ever witness. Traditional knafeh requires a pretty large tray and a lot of care and attention while making it so it’s not really reasonable for the everyday person to make. That’s where these knafeh cups come in. It’s simple and straight to the point. The clean up isn’t that bad and you get to enjoy all the great things about knafeh!
Serves: 6
Time: 1 hour
Ingredients
1 box Shredded Filo Dough
1 stick Butter
1 cup Sweet Cheese
Pistachios (For Garnish)
1 cup Sugar
1.25 cups Water
1 tbsp Rose Water
Juice of half a Lemon
Instructions
Get a small pot and fill with the water and sugar. Bring to a simmer and let it ride for 10 minutes. Cut the heat and add the rose water and lemon juice. Stir well then keep to the side to cool for 20 minutes then into the fridge for at least 30 minutes.
Take the shredded dough and let it come to room temp so it’s easy to work with and add to a large mixing bowl. Melt a stick of butter and pour into the bowl and mix well with the dough. Take the sweet cheese and break into small pieces and keep to the side.
Get a muffin or cupcake tin and lightly brush with oil. Add enough dough to fill the bottom of the tin, add cheese, then top with more dough. Place into a 350F oven for 20 minutes. Remove and let them rest for 10 minutes.
Serve and garnish with crushed pistachios and the rose water syrup and enjoy!
