Poached Cod
This is I dish I believe captures all the main flavors of the Mediterranean. It’s fresh, bright, colorful, light, and so so flavorful. You have your tomato, garlic, onion, olive oil, lemon, basil, you have it all! It’s a very simple and straightforward dish to make so I hope you can give it a go.

Time: 45 minutes
Ingredients
4 Cod Filets
3-4 Vine Ripe Tomato
1 Yellow Onion
5 minced Garlic Cloves
1 Serrano Pepper
1.5 cup Water
4 tbsp Olive Oil (divided)
1 bunch Lemon Basil
0.25 cup Cilantro
1 tsp Salt
1 tsp Black Pepper
Instructions
Finely dice the yellow onion & serrano pepper and set aside. Grind the garlic into a paste or finely mince and set aside.



Cut the tomatoes into quarters and de-seed. Place the tomato seed in a fine mesh strainer and push the water through into a small bowl. You should end up with a very light bright red water. Discard the seeds. Finely chop the tomato and set aside.



Heat up a large pan and add half the olive oil. Add the yellow onion and serrano pepper and sauté until soft (2-3 minutes). Add the garlic and sauté until fragrant. Then add the finely chopped tomato and a tsp of salt. Sauté until soft and almost completely dissolved.




Add a cup of water and bring to a simmer. Add the basil and bright tomato water and mix well. Allow it to simmer for about 5 minutes. Then use an immersion blender to blend it all together leaving some chunky bits in the sauce.


Add the remaining olive oil and mix well. Place the cod filets neatly in the sauce, top with a bit of oil or butter, then cover the pan and allow them to poach for about 10 minutes.



Plate the filets and garnish with lemon wedges, fresh cilantro, Aleppo pepper, and enjoy.
