Spicy Garlic Lemon Salmon

This is my favorite 30 minute meal that I always go to when I’m tight on time. The prep and cleanup are super quick and easy and the cook time is only 20 minutes. The best part about it is this recipe can be applied for a large party or just for yourself. This has also been my most popular recipe so I know it’s been a great success with everyone who has tried it.

Ingredients

  • 5 Garlic Cloves

  • 1 Serrano Pepper

  • 1 tsp Salt

  • 1 tsp Aleppo Pepper

  • 0.25 cup Rosemary

  • 1 Lemon

  • 2 cups Cherry Tomato

  • 2 tbsp Olive Oil

  • 1 tbsp Unsalted Butter

  • 1 tsp Black Pepper

  • 1 Large Salmon Filet


Instructions

First step is to create the marinade for the fish. Remove the peel off of the garlic and rough chop the serrano pepper. Add to mortar along with the salt and grind until a paste is created. Add Aleppo pepper and rough chopped rosemary to the mix and continue to grind. Finally add olive oil and mix well.

Line a baking tray with aluminum foil and then parchment paper on top. Make sure there is a lot of overhang for both because we’ll need to fold this over the fish before placing in the oven. Lay the filet down on the tray brush the marinade all over as evenly as possible. Add washed cherry tomatoes alongside the fish. Add sliced lemon, fresh rosemary, and a few knobs of butter on top. Finally drizzle a bit of olive oil and freshly ground black pepper across the whole tray.

Fold the parchment paper and foil so the fish is completely covered. Place in a 375F oven for 15-20 min. Remove and enjoy.
