Vermicelli Kufta Soup
This is my favorite soup. It’s beyond delicious, incredibly easy to make, and loved by everyone of all ages. I would always call it kufta noodle soup which is essentially what this is. Small kufta meatballs, vermicelli noodles, and a savory tomato broth. Top it with some fresh parsley and lots of lemon juice and you have yourself a warm and comfy soup.

Ingredients
1 lbs Ground Beef
1 Yellow Onion
1 tbsp Salt
1 tbsp Bharat
2 Garlic Cloves
1 cup Vermicelli Noodles
1 small can Tomato Paste
1/4 cup Chicken Bouillon
2 tbsp Olive Oil
8 Cups Hot Water
1/2 cup Fresh Parsley
1 Lemon
Instructions
Peel and grate the yellow onion into a medium mixing bowl. Add the ground beef, salt, and bharat and combine.
Roll the kofta into mini meatballs and broil for 20 minutes flipping halfway through.
Get a large heavy bottom pot on high heat for two minutes then drop to medium. Add the olive oil and vermicelli noodles and toast until golden brown. Add crushed garlic and saute until fragrant. Then add the tomato paste and chicken bouillon and mix until well combined.
Add the kofta an mix then finally add the water and let it boil for 10 minutes.
Plate and serve with fresh parsley and lots of lemon juice and enjoy.
